Ingredients

  • 1/4 oz active dry yeast
  • 3/4 cup warm water
  • 1/4 cup minced fresh basil
  • 1/4 cup grated parmesan cheese
  • 3 tbsp fresh tomato paste (pureed tomatoes)
  • 1 tbsp sugar
  • 1 tbsp olive oil
  • 1 tsp salt
  • 2 1/2 cup or 2 3/4 of bread flour

Method

  • In a large bowl dissolve the yeast in the water.
  • Then add all of the ingredients and 2 cups of flour, mix well.
  • Add some more flour to form a stiff dough.
  • Turn onto a lightly floured surface and knead for about 4 minutes until you get an elastic dough.
  • Grease a large bowl and place the dough in it and turn it to grease all the dough so it doesnt dry out.
  • Cover the bowl and place on a warm place for about an hour or until it doubles in size.
  • Punch down dough and knead for about 1 minute.
  • Place on a lightly greased baking sheet in your desired shape and let rise until doubled or an hour.
  • With a very sharp knife, cut an X in the middle if you made it round.
  • Bake in an oven at 375F for 35-40 minutes or until brown (dont over cook).
  • Let chill for a few minutes or use hot.
  • Perfect for a delicious capresse sandwich.
