Ingredients

  • 1 C dark beer
  • 1 C flour
  • 1 tsp salt
  • 1.5 lbs tilapia
  • Veg oil
  • Corn tortillas
  • Cabbage and cilantro slaw (see recipe)
  • Chipotle tartar sauce (see recipe)
  • Lime wedges

Method

  • 1) Whisk beer, flour, salt in bowl
  • 2) Rinse fish, cut into 1-in strips
  • 3) Heat 1 in oil in deep skillet or Dutch oven
  • 4) Dip fish in batter, drain briefly
  • 5) Slide fish into oil, fry until golden, 2-4 min
  • 6) Keep fish warm in 200-deg oven until all are cooked
  • 7) Char tortillas over burner. Put 2-3 pieces of fish in tortilla, top with slaw, serve with tartar sauce. Squeeze lime over.
