Ingredients

  • 1 (21 ounce) can apple filling
  • 1 cup butter, at room temperature
  • 1/2 cup white sugar
  • 1/2 cup (packed) dark brown sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup raisins
  • 3/4 cup chopped walnuts

Method

  • Preheat oven to 350 degrees F (175 degrees C).
  • Lightly grease a 9x5 loaf pan.
  • In a medium bowl, use a potato masher to break up apples in the filling; set aside.
  • In a large mixing bowl, cream together butter, white sugar, and brown sugar.
  • Stir in eggs, apples, and vanilla extract until well blended.
  • Sift together flour, baking soda, cinnamon, and salt.
  • Stir into apple mixture, then stir in raisins and walnuts.
  • Pour batter into prepared pan.
  • Bake in preheated oven for 60 minute, until a toothpick inserted into center of the loaf comes out clean.
  • Let bread cool in pan for 15 minutes, then turn out onto a wire rack to cool completely.
