Ingredients

  • 1 (8 1/2 ounce) package corn muffin mix
  • 1 egg
  • 13 cup milk
  • 1 (8 1/2 ounce) can creamed corn

Method

  • Preheat oven to 400.
  • Grease 9 miffin tins or line with baking cups.
  • Pour muffin mix into a medium bowl; create a well in the center.
  • In a smaller bowl, mix egg with milk.
  • Stir in corn.
  • Pour mixture into well of muffin mix.
  • Blend ingredients just to moisten.
  • (It will be lumpy).
  • Spoon batter into muffin cups and bake 15-20 minutes.
