Ingredients

  • 3 eggs
  • 1 c. vegetable oil (I use Crisco)
  • 2 c. sugar
  • 2 tsp. vanilla
  • 2 c. grated zucchini
  • 8 1/4 oz. can crushed pineapple, drained (1 1/4 c.)
  • 3 c. flour
  • 1 tsp. salt
  • 2 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. baking powder
  • 3/4 to 1 tsp. nutmeg
  • 1 c. raisins
  • 1 c. nuts, chopped

Method

  • Mix the first 4 items.
  • Add zucchini, pineapple, flour, salt, soda, cinnamon, baking powder, nutmeg, raisins and nuts.
  • Pour into 2 well-greased and floured bread pans.
  • Bake at 350° for about 1 hour.
