Ingredients

  • 2 c. chopped cooked zucchini (unpeeled)
  • 1 c. chopped onion
  • 1/2 c. butter
  • 2 c. seasoned croutons
  • 1 c. diced chicken
  • 1 can cream of chicken soup
  • 3/4 c. sour cream

Method

  • Saute onion in butter.
  • Mix zucchini and onion and add croutons, chicken, soup and sour cream.
  • Trim ends of zucchini and slice in halves lengthwise.
  • Boil in salted water until tender, about 4 minutes.
  • Use 1 1/2-quart casserole; use more croutons or bread crumbs on top and bake at 350° for 30 minutes.
