Ingredients
- 2 c. chopped cooked zucchini (unpeeled)
- 1 c. chopped onion
- 1/2 c. butter
- 2 c. seasoned croutons
- 1 c. diced chicken
- 1 can cream of chicken soup
- 3/4 c. sour cream
Method
- Saute onion in butter.
- Mix zucchini and onion and add croutons, chicken, soup and sour cream.
- Trim ends of zucchini and slice in halves lengthwise.
- Boil in salted water until tender, about 4 minutes.
- Use 1 1/2-quart casserole; use more croutons or bread crumbs on top and bake at 350° for 30 minutes.
