Ingredients

  • 1/4 c. quick cooking oats
  • 5 Tbsp. warm milk
  • 2/3 c. plain yogurt
  • 1/4 c. toasted, skinned and chopped hazelnuts
  • 3 to 4 Tbsp. honey
  • 2 Tbsp. lemon juice
  • 2 apples, coarsely grated
  • 1 pt. mixed berries
  • mint sprigs
  • thin apple slices

Method

  • Soak oats in 5 tablespoons warm milk until swollen, about 5 minutes.
  • Stir in yogurt, hazelnuts, honey and lemon juice.
  • Mix grated apples into yogurt mixture. Carefully mix in 1 pint mixed berries. Spoon mix into each of 4 goblets or bowls.
  • Garnish with thin apple slices and mint sprigs.
  • Serves 4.
  • For breakfast, brunch or dessert.
