Ingredients
- 1/2 medium onion, sliced
- 1 small green pepper, minced
- 1/2 lb. ground beef (lean)
- 1 c. cooked tomatoes
- 1/3 c. rice (uncooked)
- 1/2 tsp. chili powder
- 1 tsp. salt
- dash of pepper
Method
- Brown beef; drain.
- When almost done add green pepper and onion; saute.
- Mix in remaining ingredients.
- Pour into baking dish, cover and bake one hour.
- Yield: 2 servings.
- Carbohydrate 38 g, protein 28 g, fat 8 g, calories 336.
- One serving = 3 meat low-fat exchange, 2 bread starch exchange, 1 vegetable exchange.
