Ingredients

  • 1/2 medium onion, sliced
  • 1 small green pepper, minced
  • 1/2 lb. ground beef (lean)
  • 1 c. cooked tomatoes
  • 1/3 c. rice (uncooked)
  • 1/2 tsp. chili powder
  • 1 tsp. salt
  • dash of pepper

Method

  • Brown beef; drain.
  • When almost done add green pepper and onion; saute.
  • Mix in remaining ingredients.
  • Pour into baking dish, cover and bake one hour.
  • Yield: 2 servings.
  • Carbohydrate 38 g, protein 28 g, fat 8 g, calories 336.
  • One serving = 3 meat low-fat exchange, 2 bread starch exchange, 1 vegetable exchange.
