- 3 cups cooked rice
- 3 tbsp. oil
- 1 cup chopped walnuts
- 2 green bell peppers, sliced
- 3 carrots, sliced diagonally
- 2 cups chicken meat, cut into strips
- 2 tbsp. cornstarch
- 1 tsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. ginger
- 1/2 tsp. red pepper flakes
- 3 tbsp. soy sauce
- 4 green onions, sliced diagonally
Method
- Prepare rice according to package directions so that you end up with 3 cups cooked rice.
- Stir-fry nuts in hot oil until golden; remove from pan.
- Stir-fry green peppers and carrots until crisp tender; remove and set aside.
- Stir-fry chicken.
- Combine cornstarch, sugar, salt, red pepper and soy sauce.
- Add to chicken in pan along with walnuts, and vegies.
- Toss together until thoroughly coated.
- Serve over rice.
