Ingredients

  • 3 cups cooked rice
  • 3 tbsp. oil
  • 1 cup chopped walnuts
  • 2 green bell peppers, sliced
  • 3 carrots, sliced diagonally
  • 2 cups chicken meat, cut into strips
  • 2 tbsp. cornstarch
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. ginger
  • 1/2 tsp. red pepper flakes
  • 3 tbsp. soy sauce
  • 4 green onions, sliced diagonally

Method

  • Prepare rice according to package directions so that you end up with 3 cups cooked rice.
  • Stir-fry nuts in hot oil until golden; remove from pan.
  • Stir-fry green peppers and carrots until crisp tender; remove and set aside.
  • Stir-fry chicken.
  • Combine cornstarch, sugar, salt, red pepper and soy sauce.
  • Add to chicken in pan along with walnuts, and vegies.
  • Toss together until thoroughly coated.
  • Serve over rice.
