Ingredients
- 1 3/4 c. plain flour
- 1 Tbsp. baking powder
- 1 c. sugar
- 1/3 c. vegetable oil
- 3/4 tsp. salt
- 2 eggs, separated
- 1 1/2 c. milk
Method
- Sift together flour, baking powder, sugar and salt.
- Beat egg whites until stiff, but not dry.
- Set aside.
- Beat egg yolks until thick and creamy and lemon color.
- Continue beating; add milk, oil and dry ingredients and beat until smooth.
- Fold in beaten egg whites.
- Fry on hot grid iron or skillet and serve with syrup or jelly.
