Ingredients

  • 1/2 lb. Swift Premium hard salami, cubed
  • 2/3 c. olive oil
  • 1/3 c. sliced black olives
  • 1/4 c. minced fresh parsley
  • 2 Tbsp. grated Parmesan cheese
  • 1 tsp. lemon juice
  • 1/2 tsp. dried marjoram leaves
  • 1 c. cubed zucchini
  • 1 c. cubed yellow summer squash
  • 1 (8 oz.) can artichoke hearts, drained and halved
  • 1 (7 oz.) box tortellini, cooked and drained

Method

  • Combine olive oil with the next 6 ingredients in a glass jar. Let stand 30 minutes.
  • Mix with all remaining ingredients in 1 1/2-quart serving dish.
  • Chill until serving time.
