Ingredients

  • 1 round steak, fat removed
  • 2 green peppers, julienned
  • 1 medium onion, chopped
  • 4 carrots, cut into 1-inch chunks
  • 2 cans stewed tomatoes (Del Monte original)
  • 1/4 c. flour
  • 2 Tbsp. oil
  • salt and pepper

Method

  • Salt and pepper steak, dip steak in flour and pound flour into steak with side of saucer, until it won't hold any more.
  • Heat oil in skillet and cut meat into serving size; brown.
  • Remove steak and place in small roasting pan.
  • Place tomatoes into skillet and heat through until thick.
  • Add small amount of flour, if necessary.
  • Place cut vegetables over meat and cover with thickened tomatoes.
  • Cover with foil.
  • Bake 1 hour at 350°.
