Ingredients
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 c. milk
- 2 tsp. chopped onions or chives
- 1 Tbsp. chopped pimento (if desired)
- 1/3 c. thinly sliced celery
- 1/3 c. cooked or canned green peas
- 3 hard-cooked eggs, quartered
- biscuits
- 2 to 3 Tbsp. grated American or Cheddar cheese
Method
- Melt butter; blend in flour, salt and pepper.
- Cook over low heat, stirring until mixture is smooth; remove from heat.
- Slowly stir in milk.
- Bring to a boil over direct heat, stirring constantly.
- Boil 1 minute.
- Just before serving, stir in the rest of the ingredients, except biscuits and cheese.
- Bring mixture just to a boil.
- Serve over biscuits.
- Sprinkle cheese over top. Makes 2 generous servings.
