Ingredients

  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 c. milk
  • 2 tsp. chopped onions or chives
  • 1 Tbsp. chopped pimento (if desired)
  • 1/3 c. thinly sliced celery
  • 1/3 c. cooked or canned green peas
  • 3 hard-cooked eggs, quartered
  • biscuits
  • 2 to 3 Tbsp. grated American or Cheddar cheese

Method

  • Melt butter; blend in flour, salt and pepper.
  • Cook over low heat, stirring until mixture is smooth; remove from heat.
  • Slowly stir in milk.
  • Bring to a boil over direct heat, stirring constantly.
  • Boil 1 minute.
  • Just before serving, stir in the rest of the ingredients, except biscuits and cheese.
  • Bring mixture just to a boil.
  • Serve over biscuits.
  • Sprinkle cheese over top. Makes 2 generous servings.
