Ingredients
- 10 to 12 sweet potatoes (about 4 1/2 lb.), baked in jackets 40 to 60 minutes or until soft or 3 (18 oz. each) vacuum-packed sweet potatoes, drained
- 3/4 c. plus 2 Tbsp. butter or margarine
- 1/3 to 1/2 c. bourbon
- 1/2 tsp. salt
- 1/2 c. coarsely chopped walnuts or pecans
Method
- Cut cooked potatoes in half and scoop out pulp (about 8 cups) into large bowl of electric mixer.
- Beat at medium speed until smooth.
