Ingredients
- 1/4 cup olive oil
- 1 cup chopped onion
- 3/4 cup diced carrots
- 1/2 cup chopped celery
- 1 tsp minced garlic
- 1 lb sliced fresh mushrooms
- 6 cup chicken broth
- 3/4 cup barley
- 1 salt/peppet to taste
Method
- Heat oil in large soup pot over medium heat.
- Add the onions, carrots, celery and garlic.
- Cook and stir until onions are transparent.
- Stir in mushrooms and continue to cook for a few minutes.
- Pour in chicken broth and barley.
- Bring to a boil, then reduce heat to low.
- Cover and cook until tender, about 50 minutes.
- Season with salt and pepper.
