Ingredients

  • 1/4 cup olive oil
  • 1 cup chopped onion
  • 3/4 cup diced carrots
  • 1/2 cup chopped celery
  • 1 tsp minced garlic
  • 1 lb sliced fresh mushrooms
  • 6 cup chicken broth
  • 3/4 cup barley
  • 1 salt/peppet to taste

Method

  • Heat oil in large soup pot over medium heat.
  • Add the onions, carrots, celery and garlic.
  • Cook and stir until onions are transparent.
  • Stir in mushrooms and continue to cook for a few minutes.
  • Pour in chicken broth and barley.
  • Bring to a boil, then reduce heat to low.
  • Cover and cook until tender, about 50 minutes.
  • Season with salt and pepper.
