Ingredients

  • 4 lb. sweet potatoes
  • 1/2 lb. butter
  • 1/2 doz. eggs
  • 4 Tbsp. vanilla flavor
  • 2 Tbsp. nutmeg
  • 1 Tbsp. cinnamon
  • 3 c. sweet milk
  • 1 Tbsp. salt
  • 3 c. sugar

Method

  • Peel and clean
  • the potatoes.
  • Place in a pot and cover with water; bring to
  • boil
  • and let cook over a medium fire until done.
  • Remove the potatoes from the water and drain.
  • In a mixing bowl mash the potatoes well.
  • Add the butter, flavor, nutmeg, cinnamon, salt, sugar and eggs.
  • Mix well and gradually add the milk until a smooth custard is made.
  • A little more or a little less milk may be needed.
  • Pour in a 9-inch pie pan and bake in a preheated
  • oven
  • cook
  • for
  • to 2 1/2 hours at 325°.
  • Makes 3 to 5 pies.
