Ingredients
- 1 (55 oz.) can orange pineapple yams
- 3 egg yolks
- 1 c. sugar
- 1 tsp. vanilla
- 1/2 c. flour
- 1/2 c. pecans
- 1/2 c. coconut
- 1/2 c. potato juice
Method
- Drain potatoes.
- Add 1/2 cup potato juice to mixture.
- Beat potatoes with egg yolks, sugar, vanilla and flour.
- Add pecans and coconut (mix by hand).
- Microwave on High for 8 minutes. Refrigerate to cool.
- Bake pie crusts (let cool).
- Fold mixture into cooled pie crust and add meringue to top.
