Ingredients

  • 2 c. boiling milk
  • 2/3 c. corn meal
  • 2 Tbsp. mayonnaise
  • 1 1/2 tsp. salt
  • 3 beaten egg yolks
  • 3 stiffly beaten egg whites

Method

  • Sift corn meal into boiling milk.
  • Stir constantly over low heat until milk and meal are just blended and thickened.
  • Beat in mayonnaise and salt.
  • Cool; don't chill.
  • Add beaten egg yolks and fold in stiffly beaten egg whites.
  • Grease medium casserole in the bottom and part way up the sides.
  • Pour in mixture and bake at 350° for 35 minutes.
  • Serves 6.
