Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup minced onion
  • 2 cups diced spicy sausage
  • 2 cups beef broth or 2 cups bouillon
  • 1 (15 ounce) can chili beans, with sauce
  • 3 cups cooked rice (I used leftover red rice)
  • 1/2 teaspoon cumin
  • 1 teaspoon cilantro
  • fresh parsley

Method

  • In a large sauce pan on medium heat, saute onion in olive oil until translucent.
  • Add sausage and lightly brown.
  • Stir in broth, beans, rice, cumin, and cilantro.
  • Reduce heat and simmer for 30 minutes.
  • Place in a bowl and sprinkle with parsley.
  • ****To complete meal, I added basil-cheese rolls.
