Ingredients
- 1 tablespoon olive oil
- 1/2 cup minced onion
- 2 cups diced spicy sausage
- 2 cups beef broth or 2 cups bouillon
- 1 (15 ounce) can chili beans, with sauce
- 3 cups cooked rice (I used leftover red rice)
- 1/2 teaspoon cumin
- 1 teaspoon cilantro
- fresh parsley
Method
- In a large sauce pan on medium heat, saute onion in olive oil until translucent.
- Add sausage and lightly brown.
- Stir in broth, beans, rice, cumin, and cilantro.
- Reduce heat and simmer for 30 minutes.
- Place in a bowl and sprinkle with parsley.
- ****To complete meal, I added basil-cheese rolls.
