Ingredients
- 2 whole medium chicken breasts, skinned, boned and halved lengthwise
- 1/3 c. cherry or seedless red raspberry preserves
- 1 Tbsp. lemon juice
- dash of ground allspice
Method
- Rinse chicken; pat dry.
- Place on the unheated rack of a broiler pan.
- Broil 4 to 5 inches from the heat for 6 minutes. Brush with some of the lemon juice.
- Turn poultry over.
- Brush with remaining lemon juice.
- Broil 6 to 9 minutes or until tender and no longer pink.
