Ingredients

  • 2 c. mashed cooked sweet potatoes
  • 2/3 c. mashed ripe bananas
  • 12 oz. can evaporated milk (skim)
  • 1/4 c. packed brown sugar
  • 2 eggs, beaten
  • 1/2 tsp. salt
  • 1/2 c. raisins
  • 1 Tbsp. sugar
  • 1/2 tsp. ground cinnamon

Method

  • In a large mixing bowl, combine sweet potatoes and bananas. Add milk; mix well.
  • Stir in brown sugar, eggs and salt until well blended.
  • Spray eight 1/2-inch ramekins, souffle dishes or 6 ounce custard cups with nonstick spray coating.
  • Divide mixture evenly among the ramekins or cups.
  • Sprinkle raisins in each cup. Arrange ramekins or cups on a baking sheet.
  • Combine sugar and cinnamon; sprinkle on top of each.
  • Bake in a 325° oven for about 35 minutes or until a knife inserted comes out clean.
  • Serve warm.
