Ingredients

  • 1 bottle Russian dressing
  • 1 pkg. Lipton onion soup mix
  • 1 jar apricot preserves
  • chicken pieces or whole cut up chicken
  • sliced carrots
  • 1 can chunky pineapple

Method

  • Mix first 3 ingredients and pour over chicken pieces.
  • (I remove skin from chicken.)
  • Cover and cook at 350° for 1 hour. Add sliced carrots and 1 can chunky pineapple to chicken mixture. Cook until tender (another hour or more).
  • Keep covered.
  • Serve over rice.
