Ingredients
- 1 1/2 c. mashed cooked winter squash
- 2 Tbsp. butter
- 1 Tbsp. brown sugar
- 1/4 tsp. salt
- 1/4 tsp. grated orange peel
- dash of pepper
- 2 egg yolks
- 2 egg whites
Method
- In large mixing bowl, combine squash, butter, brown sugar, salt, pepper and orange peel.
- Beat until fluffy.
- Add egg yolks; beat well.
- Beat egg whites until stiff peaks form.
- Carefully fold into squash mixture.
- Bake souffle in 350° oven for 30 minutes to 45 minutes.
- Makes 4 to 6 servings.
