Ingredients

  • 1 can tomatoes, mashed
  • 1/2 c. onion, diced
  • 1/2 c. celery, diced
  • 3 Tbsp. lemon juice
  • 1/2 tsp. brown mustard
  • 1/8 tsp. pepper
  • 2 to 3 drops Tabasco
  • 1 lb. flounder fillets

Method

  • Combine all ingredients except fish in large skillet.
  • Cook tomato mixture over high heat, stirring constantly, 5 to 7 minutes or until sauce is thickened.
  • Reduce heat.
  • Add fillets.
  • Spoon some sauce on top of each fillet.
  • Cook 10 to 12 minutes longer or until fish flakes easily when tested with fork.
