Ingredients
- 1 can tomatoes, mashed
- 1/2 c. onion, diced
- 1/2 c. celery, diced
- 3 Tbsp. lemon juice
- 1/2 tsp. brown mustard
- 1/8 tsp. pepper
- 2 to 3 drops Tabasco
- 1 lb. flounder fillets
Method
- Combine all ingredients except fish in large skillet.
- Cook tomato mixture over high heat, stirring constantly, 5 to 7 minutes or until sauce is thickened.
- Reduce heat.
- Add fillets.
- Spoon some sauce on top of each fillet.
- Cook 10 to 12 minutes longer or until fish flakes easily when tested with fork.
