Ingredients

  • 1 fish filet (flounder, cod or your choice)
  • 3 Tbsp. margarine, melted
  • 2 Tbsp. orange or lemon juice
  • 1 Tbsp. orange or lemon rind, grated
  • 1/2 tsp. salt
  • 1/2 tsp. white pepper
  • 1 tsp. nutmeg

Method

  • Mix together melted margarine, juice, grated rind, salt, pepper and nutmeg.
  • Place filet on a piece of aluminum foil in a shallow baking dish.
  • Baste filet with sauce, using all of it. Fold foil over fish.
  • Bake at 325° for 25 minutes.
  • Test for doneness.
  • Using a fork, if fish flakes, it is done.
  • Do not overcook.

  • 1 filet for this mixture.
