Ingredients
- 1 fish filet (flounder, cod or your choice)
- 3 Tbsp. margarine, melted
- 2 Tbsp. orange or lemon juice
- 1 Tbsp. orange or lemon rind, grated
- 1/2 tsp. salt
- 1/2 tsp. white pepper
- 1 tsp. nutmeg
Method
- Mix together melted margarine, juice, grated rind, salt, pepper and nutmeg.
- Place filet on a piece of aluminum foil in a shallow baking dish.
- Baste filet with sauce, using all of it. Fold foil over fish.
- Bake at 325° for 25 minutes.
- Test for doneness.
- Using a fork, if fish flakes, it is done.
- Do not overcook.
- Yield:
- 1 filet for this mixture.
