Ingredients

  • 1 large pattipan squash
  • 1 red onion
  • 1 large poblano pepper
  • 1 large clove of elephant garlic
  • 12 oz peeled deveined shrimp tail off
  • 4 tbsp butter
  • 10 oz shredded sharp cheddar cheese
  • 8 oz sliced portabella mushrooms

Method

  • preheat oven to 375F
  • chop pepper and onions garlic and mushrooms to small pieces
  • melt butter in large frypan and saute all the chopped veggies till tender
  • cut the top off of your squash and hollow it out to make a nice bowl
  • when veggies are soft salt and pepper to taste then toss in the shrimp and stir them in really well turn off the burner and let them sit
  • spoon your mixture into the squash bowl till it almost fills the bowl
  • top with shredded cheddar cheese and bake for 45 to 55 minutes
  • enjoy and heat hearty
