Ingredients
- 2 lb. yellow squash
- 1 large onion, chopped fine
- 1 can cream of chicken soup
- 1 pkg. Pepperidge Farm cornbread mix
- 1 c. sour cream
- 1 stick margarine
- salt and pepper to taste
Method
- Cook squash until tender. Drain. Mash squash. Add salt and pepper. Add melted margarine, onion, soup, sour cream and half of stuffing mix. Mix thoroughly and pour into a casserole dish. Sprinkle remaining stuffing mix on top and bake at 350° for 30 to 40 minutes.
