Ingredients

  • 3 eggs
  • 3/4 cup milk
  • 3/4 cup all purpose flour
  • 1/2 tsp salt
  • 1/2 cup butter, melted
  • juice of 1/2 lemon
  • confectioners sugar

Method

  • Preheat oven to 450°.
  • Beat eggs and milk until they are well blended.
  • Add the flour and salt, stirring the batter until it is slightly lumpy.
  • Set 10-inch pie pan or skillet in oven to melt butter.
  • When the butter is very hot, pour in the batter and bake for about 20 minutes or longer or until the pancake is brown and puffed.
  • Sprinkle with lemon juice and confectioners sugar and cut into wedges.
  • Serve immediately as it will deflate quickly.
  • Serves 4.
