Ingredients
- 3 eggs
- 3/4 cup milk
- 3/4 cup all purpose flour
- 1/2 tsp salt
- 1/2 cup butter, melted
- juice of 1/2 lemon
- confectioners sugar
Method
- Preheat oven to 450°.
- Beat eggs and milk until they are well blended.
- Add the flour and salt, stirring the batter until it is slightly lumpy.
- Set 10-inch pie pan or skillet in oven to melt butter.
- When the butter is very hot, pour in the batter and bake for about 20 minutes or longer or until the pancake is brown and puffed.
- Sprinkle with lemon juice and confectioners sugar and cut into wedges.
- Serve immediately as it will deflate quickly.
- Serves 4.
