Ingredients

  • 2 1/2 c. water
  • 1 c. quick cooking grits, uncooked
  • 3 Tbsp. butter or margarine
  • 1 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 eggs, beaten
  • 1 1/2 c. shredded Cheddar cheese, divided

Method

  • Microwave the
  • water
  • on
  • High until boiling in a 1 1/2 quart casserole
  • or
  • use the conventional range to boil.
  • Add grits, butter, salt and pepper to the water.
  • Cover with waxed paper. Microwave
  • at
  • High
  • minutes, stirring twice.
  • Stir some of the hot grits into the beaten eggs.
  • Stir in 1 cup of cheese and add egg-cheese mixture to grits.
  • Stir well to mix. Microwave on
  • High 5 minutes.
  • Rotate
  • dish 1/2 turn after 2 minutes.
  • Sprinkle the
  • reserved
  • 1/2 cup
  • cheese
  • on top of mixture.
  • Cover. Microwave
  • on High 2 minutes or until cheese melts.
  • Let
  • stand
  • 3 to 4 minutes before serving.
  • Serve hot. Yield:
  • 6 to 8 servings.
