Ingredients

  • 1 lb. large shrimp
  • 2 tsp. salt
  • thyme, peppercorns to taste
  • 16 to 18 stuffed green olives
  • 1/4 c. mayonnaise
  • pepper to taste

Method

  • Shell, devein shrimp and place in boiling salted and seasoned water.
  • Boil until the shrimp turn pink.
  • Drain and dice the shrimp.
  • Dice the green olives.
  • Combine all ingredients with mayonnaise.
  • Season with pepper to taste.
  • Serve with crackers, cocktail breads or spread in celery sticks.
