Ingredients
- 2 eggplant (about 1 pound each)
- 2 Large eggs, beaten
- 1/4 c. Parmesan cheese
- 1/2 c. bread crumbs
- 1 tbsp. parsley, finely minced
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 c. flour
- 4 tbsp. melted butter
Method
- In a small bowl, combine bread crumbs, parsley, salt and pepper.
- Peel eggplant and cut in 1/2 inch slices.
- Dip in flour, then egg, then crumb mix.
- Brush cookie tin or possibly jelly roll pan with melted butter and place prepared eggplant slices in pan.
- Bake uncovered for 25 min at 400 degrees, turning once.
- Serves 6.
