Ingredients

  • 2 eggplant (about 1 pound each)
  • 2 Large eggs, beaten
  • 1/4 c. Parmesan cheese
  • 1/2 c. bread crumbs
  • 1 tbsp. parsley, finely minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 c. flour
  • 4 tbsp. melted butter

Method

  • In a small bowl, combine bread crumbs, parsley, salt and pepper.
  • Peel eggplant and cut in 1/2 inch slices.
  • Dip in flour, then egg, then crumb mix.
  • Brush cookie tin or possibly jelly roll pan with melted butter and place prepared eggplant slices in pan.
  • Bake uncovered for 25 min at 400 degrees, turning once.
  • Serves 6.
