- 10 lbs. tomatoes
- 13 hot peppers (jalepeno or habenera)
- 4 green peppers
- 1 1/2 lb. onions
- 1 Tbsp. salt
- 1 tsp. garlic (8 pressed cloves)
- 2 1/2 tsp. black pepper
- 1 1/2 tsp. crushed red pepper
- 2 - 3 Tbsp. chopped, fresh cilantro
- 2/3 c. lemon juice
Method
- Blend all chopped ingredients along with juices in large (8 qt.) pan.
- Bring to a boil and simmer for 15 minutes.
- Can in water bath for 10 minutes.
