- 4 Tbsp. butter
- 1 large chopped green onion
- 2 bay leaves
- 1/2 tsp. Tabasco
- 1 c. sliced celery
- 2 1/2 c. tomatoes (canned works fine)
- 1 small can tomato paste if you like creole thick
- 1 tsp. sugar
- 1/2 tsp. salt
- 1 tsp. thyme (secret ingredient, use more if you prefer)
- 1 tsp. chili powder
- 1 lb. peeled shrimp
Method
- Saute onion until soft, not brown.
- Add pepper.
- Cook until soft.
- Add celery and tomato, and paste if using it.
- Bring to boil.
- Reduce heat and add seasonings.
- Simmer until shrimp is done, about 8 minutes.
- Do not overcook shrimp.
- Serves 4.
