Ingredients

  • 4 Tbsp. butter
  • 1 large chopped green onion
  • 2 bay leaves
  • 1/2 tsp. Tabasco
  • 1 c. sliced celery
  • 2 1/2 c. tomatoes (canned works fine)
  • 1 small can tomato paste if you like creole thick
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1 tsp. thyme (secret ingredient, use more if you prefer)
  • 1 tsp. chili powder
  • 1 lb. peeled shrimp

Method

  • Saute onion until soft, not brown.
  • Add pepper.
  • Cook until soft.
  • Add celery and tomato, and paste if using it.
  • Bring to boil.
  • Reduce heat and add seasonings.
  • Simmer until shrimp is done, about 8 minutes.
  • Do not overcook shrimp.
  • Serves 4.
