- 1 cup cornmeal
- 1/2 cup flour
- 1 tsp. Salt
- 1/2 tsp soda
- 1/2 tsp sugar
- 1/2 cup oil
- 1 cup buttermilk
- 1 cup cream style corn
- 1 medium onion, chopped
- Diced jalapeno peppers (2 is plenty hot)
- 1/4 lb. Grated cheddar cheese
- 2 eggs, slightly beaten
Method
- Preheat oven to 450°.
- Grease 8 inch pan.
- In mixing bowl combine dry ingredients.
- Stir in corn, onion, peppers and cheese. Combine oil, eggs and buttermilk.
- Add to dry ingredients.
- Stir only until moistened.
- Turn into pan.
- Bake until lightly brown. Let set
- 5 - 10 minutes before cutting.
