Ingredients

  • 1 cup cornmeal
  • 1/2 cup flour
  • 1 tsp. Salt
  • 1/2 tsp soda
  • 1/2 tsp sugar
  • 1/2 cup oil
  • 1 cup buttermilk
  • 1 cup cream style corn
  • 1 medium onion, chopped
  • Diced jalapeno peppers (2 is plenty hot)
  • 1/4 lb. Grated cheddar cheese
  • 2 eggs, slightly beaten

Method

  • Preheat oven to 450°.
  • Grease 8 inch pan.
  • In mixing bowl combine dry ingredients.
  • Stir in corn, onion, peppers and cheese. Combine oil, eggs and buttermilk.
  • Add to dry ingredients.
  • Stir only until moistened.
  • Turn into pan.
  • Bake until lightly brown. Let set
  • 5 - 10 minutes before cutting.
