Ingredients

  • 1 can tomato paste
  • 1 1/2 c. flour
  • 1 c. oil
  • 2 qt. water
  • 1 can whole Ro-Tel tomatoes
  • 1 can tomato sauce
  • 3 stalks celery, chopped
  • 1 bell pepper, chopped
  • 2 large onions, chopped
  • 1/2 lb. crab meat
  • 3 c. okra, chopped
  • 3 pods garlic, minced
  • 1/4 c. parsley, chopped
  • 1/3 c. green onion, chopped
  • 2 tsp. salt
  • Tony's creole seasoning
  • Tabasco to taste
  • red and black pepper to taste
  • 1 1/2 to 2 lb. shrimp or crawfish

Method

  • Make roux by stirring flour and shortening over medium heat until well browned.
  • In a large pan, mix roux, water, tomatoes and tomato sauce.
  • Cook 5 minutes.
  • Add celery, bell pepper, okra, onions and garlic.
  • Cook 10 minutes.
  • Add parsley, green onion, seafood, salt, red and black pepper and Tabasco.
  • Cook 1 hour. Serve over rice.
