Ingredients

  • 4 Tbsp. olive oil
  • 2 to 3 cloves garlic, chopped
  • 1 medium onion, chopped
  • 2 cans flat anchovies in oil, rinsed carefully
  • 1 (12 oz.) can tomato paste
  • 1 (29 oz.) can Italian tomatoes, crushed
  • 1 (29 oz.) can tomato sauce
  • 2 Tbsp. parsley, chopped
  • pepper to taste
  • 2 large (12 oz.) cans tuna fish in oil

Method

  • Saute onion and garlic in oil until lightly browned.
  • Add rinsed anchovies and stir.
  • Anchovies will become pasty.
  • Add tomato paste, 2 cans (paste) of water, tomato sauce and crushed tomatoes; also parsley and pepper.
  • Slow simmer for 1 1/2 hours. Then add tuna; mix well and simmer another 30 to 45 minutes. Serve over spaghetti or fettucini.
