Ingredients

  • 1 lemon
  • 1 c. sugar
  • butter (the size of an egg)
  • 1 Tbsp. cornstarch
  • 1 c. boiling water
  • 2 eggs, separated
  • 1 Tbsp. powdered sugar

Method

  • Be sure to put together
  • in
  • the
  • order
  • named.
  • Take 1 large, juicy lemon and squeeze
  • out all the juice.
  • Place in a separate bowl the sugar
  • and
  • butter.
  • In separate pan stir in cornstarch and just enough
  • water to make it smooth, then stir this into a cup of boiling water.
  • Bring it to a boil and then pour it on the butter
  • and sugar. Stir in the lemon juice and when a little cooler, stir
  • in
  • the
  • beaten yolks of two eggs. Pour this into crust
  • which
  • should
  • stand
  • ready.
  • Bake until thick, but not until it wheys.
  • Top with beaten egg whites and powdered sugar. Brown in oven.
