Ingredients
- 1 lemon
- 1 c. sugar
- butter (the size of an egg)
- 1 Tbsp. cornstarch
- 1 c. boiling water
- 2 eggs, separated
- 1 Tbsp. powdered sugar
Method
- Be sure to put together
- in
- the
- order
- named.
- Take 1 large, juicy lemon and squeeze
- out all the juice.
- Place in a separate bowl the sugar
- and
- butter.
- In separate pan stir in cornstarch and just enough
- water to make it smooth, then stir this into a cup of boiling water.
- Bring it to a boil and then pour it on the butter
- and sugar. Stir in the lemon juice and when a little cooler, stir
- in
- the
- beaten yolks of two eggs. Pour this into crust
- which
- should
- stand
- ready.
- Bake until thick, but not until it wheys.
- Top with beaten egg whites and powdered sugar. Brown in oven.
