Ingredients

  • 16 oz baby spinach
  • 1/2 cup all-purpose flour
  • 3 oz Cheddar cheese, grated
  • 5 oz ham, diced
  • 1.5 oz feta cheese, crumbled
  • 2 cups milk
  • 4 None large eggs, lightly beaten
  • 4 1/2 tbsp butter, melted
  • 1 oz Parmesan cheese, grated
  • None None salad, to serve

Method

  • Preheat oven to 350°F. Lightly grease a 9 1/2 inch diameter pie dish.
  • Place spinach in a heatproof bowl and cover with boiling water. Soak for 1 min then rinse under cold running water until cool. Drain.
  • Sift flour into a mixing bowl. Stir in cheese, ham and feta. Whisk together milk, eggs and butter then stir into flour mixture. Add spinach. Pour into prepared dish and sprinkle evenly with Parmesan. Bake for 45-50 mins, or until golden and set.
  • Serve warm or cold with salad.
