Ingredients
- 110 grams Butter
- 100 grams White Sugar
- 1 Egg
- 1 1/2 cup All Purpose Flour
- 1 tsp Baking Powder
- 1/2 tsp Vanilla Extract
- 1/2 cup Raisins (optional)
- 1 cup Corn Flakes, lightly crushed
Method
- Preheat oven to 175C
- Cream butter and sugar together untill light and fluffy.
- Add egg and cream again.
- Mix in flour, baking powder and dried fruits if using.
- Mix until well combined.
- Roll teaspoonfuls of dough into lightly crushed cornflakes.
- Place cookies 2" apart on a parchment lined baking sheet.
- Bake for 10-15mins until lightly golden brown
