Ingredients

  • 110 grams Butter
  • 100 grams White Sugar
  • 1 Egg
  • 1 1/2 cup All Purpose Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Vanilla Extract
  • 1/2 cup Raisins (optional)
  • 1 cup Corn Flakes, lightly crushed

Method

  • Preheat oven to 175C
  • Cream butter and sugar together untill light and fluffy.
  • Add egg and cream again.
  • Mix in flour, baking powder and dried fruits if using.
  • Mix until well combined.
  • Roll teaspoonfuls of dough into lightly crushed cornflakes.
  • Place cookies 2" apart on a parchment lined baking sheet.
  • Bake for 10-15mins until lightly golden brown
