Ingredients
- 2 whole Rotisserie Chicken (about 2 Lbs. Each)
- 1 Large Onion, Peeled And Diced Small, Divided
- 1 Tablespoon Olive Oil
- 4 cloves Garlic, Minced
- 2 Tablespoons Fresh Rosemary
- 1 cup Mayonnaise, Or Less To Taste
- Salt And Pepper, to taste
Method
- Start by shredding rotisserie chickens. Place in a large bowl. Add half of the onions to the chicken, set aside.
- Add olive oil to skillet on medium heat. To the oil add the remaining onions, minced garlic and rosemary. Saute until onions are opaque. Add the cooked onions/garlic/rosemary to the chicken. Then add mayonnaise; I'm not a big fan of mayo so I tend to make mine more on the dry side. Add salt and pepper to taste. Mix well.
