Ingredients

  • 6 pork chops (3/4-inch thick)
  • 2 tsp. olive oil
  • 1/2 tsp. salt
  • ground pepper to taste
  • 1/2 c. orange juice
  • 3 Tbsp. lemon juice
  • 1 Tbsp. honey
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 2 c. peeled, sliced fresh peaches or canned

Method

  • In heavy skillet, saute chops in oil until golden brown on both sides, then season with salt and pepper.
  • Combine orange and lemon juices with honey, cinnamon and ginger and pour over chops. Cover tightly and cook for 20 minutes over medium heat.
  • Add peaches; cover and cook until heated through (about 10 minutes). Remove chops and peaches; reduce sauce, if desired, and pour over chops and peaches.
  • Serve.
  • Makes 3 servings.
