- 10 c. zucchini
- 5 Tbsp. salt
- 1 green bell pepper
- 6 c. sugar
- 1 tsp. turmeric
- 1 tsp. nutmeg
- 1/2 tsp. black pepper
- 1 red bell pepper
- 4 c. onion
- 2 1/4 c. white vinegar
- 1 tsp. dry mustard
- 1 tsp. cornstarch
- 2 tsp. celery seed
Method
- Chop fine the zucchini, bell peppers and onion.
- Mix with salt.
- Let stand, covered, in refrigerator overnight.
- Drain and rinse in cold water.
- Add remaining ingredients.
- Cook 20 minutes and seal in hot jars.
- Makes 6 pints.
