- 2/3 c. barley
- 4 c. water
- 2 beef flavored bouillon cubes
- 1/4 lb. sliced fresh mushrooms
- 2 Tbsp. sliced green onions
- 1 clove garlic, minced
- 3 Tbsp. butter
- 1/2 tsp. salt
- 1/4 tsp. thyme
- dash of pepper
Method
- Bring water to boil.
- Add barley and bouillon cubes.
- Cover and reduce heat.
- Simmer 1 hour or until barley is tender.
- Drain. Saute mushrooms, onions, garlic and butter until tender.
- Stir in barley and spices.
- Yields 6 servings.
