Ingredients

  • 1 lb. Italian sausage (hot or sweet)
  • 1 large onion
  • 2 large green peppers
  • 2 tomatoes (ripe)

Method

  • In a large skillet, saute sausage (first, prick with fork) for approximately 10 minutes.
  • Remove fat; place in baking pan.
  • Seed and core peppers; cut into 1-inch strips.
  • Peel and slice onion. Dice tomatoes.
  • Place sausage, peppers, onion, tomatoes, salt and pepper in pan; bake in a 350° oven for approximately 1 hour.
