Ingredients
- 1 (27 oz.) can sauerkraut
- 1 c. chopped celery
- 2 Tbsp. chopped pimento
- 1/3 c. sugar
- 1 medium green pepper
- 1 medium onion
- 1/4 c. vegetable oil
- 1/2 c. cider vinegar
- 1 tsp. salt
Method
- Place sauerkraut in strainer and rinse well under cold running water.
- Thoroughly drain off all liquid and place kraut in a large bowl.
- Add remaining ingredients and mix until thoroughly blended. Spoon salad into jars or plastic containers and cover.
- Chill in refrigerator overnight.
- Makes 1 1/2 quarts.
