Ingredients

  • 1 (27 oz.) can sauerkraut
  • 1 c. chopped celery
  • 2 Tbsp. chopped pimento
  • 1/3 c. sugar
  • 1 medium green pepper
  • 1 medium onion
  • 1/4 c. vegetable oil
  • 1/2 c. cider vinegar
  • 1 tsp. salt

Method

  • Place sauerkraut in strainer and rinse well under cold running water.
  • Thoroughly drain off all liquid and place kraut in a large bowl.
  • Add remaining ingredients and mix until thoroughly blended. Spoon salad into jars or plastic containers and cover.
  • Chill in refrigerator overnight.
  • Makes 1 1/2 quarts.
