- 1 1/2 c. zucchini, chunked
- 1 c. chopped onion
- 1 c. celery, diced
- 1 c. carrot, thinly sliced
- 1 c. mushrooms, sliced
- 3 Tbsp. butter
- 1/2 lb. spaghetti
- 1 large jar spaghetti sauce
- 1 lb. cottage cheese
- 2 c. shredded Mozzarella
- Parmesan cheese
Method
- Saute vegetables in butter.
- Cook spaghetti.
- In 12 x 8-inch baking dish, layer 1/2 spaghetti sauce, vegetables, cottage cheese and Mozzarella cheese; repeat layers.
- Top with Parmesan cheese. Bake at 350° for 30 minutes.
- Let stand 5 minutes before serving.
