Ingredients

  • 1 1/2 c. zucchini, chunked
  • 1 c. chopped onion
  • 1 c. celery, diced
  • 1 c. carrot, thinly sliced
  • 1 c. mushrooms, sliced
  • 3 Tbsp. butter
  • 1/2 lb. spaghetti
  • 1 large jar spaghetti sauce
  • 1 lb. cottage cheese
  • 2 c. shredded Mozzarella
  • Parmesan cheese

Method

  • Saute vegetables in butter.
  • Cook spaghetti.
  • In 12 x 8-inch baking dish, layer 1/2 spaghetti sauce, vegetables, cottage cheese and Mozzarella cheese; repeat layers.
  • Top with Parmesan cheese. Bake at 350° for 30 minutes.
  • Let stand 5 minutes before serving.
