Ingredients

  • 1 1/2 lbs ground beef
  • 1/2 lb ground pork
  • 1 medium onion, finely chopped
  • 2 eggs
  • 1/2 cup pumpernickel breadcrumbs (1 slice)
  • 1/2 cup ground gingersnap cookie (about 10)
  • 3 tablespoons cider vinegar
  • 1 1/2 teaspoons prepared mustard
  • 2 teaspoons salt
  • glaze
  • 1/4 cup brown sugar
  • 3 tablespoons cider vinegar
  • 1 tablespoon prepared mustard
  • 3 tablespoons ketchup

Method

  • Pre-heat oven to 375.
  • In a large bowl combine all ingredients for the meatloaf mixture. Mix well with a wooden spoon or (my preference) hands Spoon mixture into a 8" square pan or 9"x5" loaf pan. Combine the ingredients for the glaze in a small bowl mixing well to combine. Spoon glaze over top of loaf.
