Ingredients

  • 1 Large warm water lobster tail (meat removed and diced)
  • 2-3 potatoes (size dependent)
  • 1 cup mushrooms (quartered)
  • 1 Serrano Pepper (Finely Chopped)
  • 3 TBSP Butter
  • 1 TBSP Olive Oil
  • 1 Lemon
  • Manchego Cheese
  • Salt
  • Pepper

Method

  • Cube your potatoes to about 1/4 inch cubes
  • Quarter your mushrooms
  • Chop your Serrano pepper finely
  • In a skillet on med low add 2 TBSP butter and 1 TBSP olive oil heat until butter smells nutty. Add potatoes season with salt and pepper, toss to coat, and suate for 10 minutes tossing occaisionally. After ten minutes add mushrooms and serrano pepper. Re-season with salt and pepper, saute for five minutes tossing occaisonally. After five minutes add diced lobster, the remainder of the butter, the lemon juice and zest and grate approx i/8 cup of cheese. Toss or stir to combine, and saute for five minutes, serve hot.
