Ingredients

  • FOR THE ROASTED BANANAS:
  • 3 whole Ripe Bananas
  • 1/3 cups Brown Sugar
  • 1 Tablespoon Butter

  • FOR THE BARS:
  • 2 cups All-purpose Flour
  • 1/4 cups Cornstarch
  • 3/4 teaspoons Baking Soda
  • 1/2 teaspoons Baking Powder
  • 1-1/4 cup Sugar
  • 1/2 cups Butter
  • 2 whole Eggs
  • 1/4 cups Nonfat Buttermilk
  • 1 teaspoon Vanilla Extract

  • FOR THE FROSTING:
  • 1/4 cups Butter
  • 2 cups Powdered Sugar
  • 1/3 cups Reduced Fat Cream Cheese
  • 1 teaspoon Vanilla Extract
  • 1/4 cups Chopped Pecans, To Sprinkle On Top

Method

  • Preheat oven to 400°F.
  • Combine the ingredients for the roasted bananas in a bowl. Once mixed, transfer to a baking dish. Bake at 400°F for 35 minutes, stirring after 17 minutes. Cool and set aside.
  • For the bars, combine flour, corn starch, soda, and baking powder in a medium bowl. Combine sugar and butter into another bowl. Add eggs and stir until creamy.
  • Combine banana mixture, buttermilk, and vanilla in another medium bowl. Add the banana mixture and sugar mixture into the flour mix. Stir well.
  • Pour batter into a 9 by 13 pan and bake for 20 minutes. Let cool.
  • For the frosting, melt the butter in a small saucepan over medium heat; cook 4 minutes or until lightly browned.
  • In a medium bowl, stir sugar, cream cheese, vanilla and cooled browned butter. Stir until smooth.
  • Once bars are completely cooled, frost and sprinkle with pecans.
