Ingredients

  • 1 serrano pepper, seeded & roughly chopped
  • 3 tomatoes, cut into 1/4 's
  • 12 bunch cilantro
  • 12 red onion, cut into 1/4 's
  • 1 garlic clove
  • 2 avocados, peeled
  • 12 cup light sour cream
  • 2 teaspoons salt

Method

  • Place pepper, tomatoes, cilantro, red onion, and garlic clove in food processor.
  • Process until it looks like salsa.
  • Add 1 avocado, pulse until mixture turns light green.
  • Add the next avocado, pulse until mixture looks lighter.
  • Add sour cream and pulse until mixture is smooth to your liking.
  • Add salt and pulse one last time.
  • Serve with tortilla chips, quesadillas, whatever you like.
